4 day Cookery Course

One culinary adventure per day. Such is life in Puglia, a bountiful region with hundreds of miles of coastline surrounding this peninsula which accounts for its wealth of seafood,Affresco greater olive, grape and wheat production than any other region in Italy, and a host of indigenous pastas, cheeses and meats. Join us and like all our clients, you will say “I have never tasted better or fresher food !”

Your accomadation will be a 4 stars historical residence with a discreet and impeccable service in the historical center of Conversano. After the collection from the airport and transfer to your accommodation where we will meet you with a welcome drink, you could have a chance to rest in your room. In the evening you will have dinner in a typical selected restaurant.
The following morning after breakfast it will start the cooking classes. 1st lesson: oven recipes - how to make focaccia; pasta for typical biscuits: “taralli”; pasta for pizza: different kinds of pizza: “margherita”, “crudaiola”, “vegetariana” e “al limone”. After lunch, in the afternoon, we’ll visit the small town of Polignano and its splendid sea and its breathtaking waterfront. Return to Conversano and free evening where you can go Portoshopping or dine in typical pizzeria.
The following day, 2nd cookery lesson: traditional way of cooking - how to make lamb with potatoes roasted in the wood oven; fresh pasta: “cavatelli” and how to make cavatelli with beans. Lunch will follow on the terrace with a magnificent view.
The afternoon will be devoted to the visit of Matera, one of the 3 Unesco heritage sites in our tours. In the evening, you will probably be tired and may want to rest, but the local places may well tempt you.
Third day, 3rd lesson: vegetables - how to make rolled egg plants, sweet and sour peppers, olive oil grilled vegetables, “au gratin” mushrooms, oven cooked onions, cicorie with broad beans purea.
Soon after lunch, visit of Gioia del Colle including its castle, museum, ancient churches and the historical centre. Then, you’ll get to the wine cellar where you will see its production methods before concluding your visit with a wonderful wine tasting session in the vineyards. Return to Conversano and free evening.
The last day of the cooking classes will be on dessert: how to make jam and then, tart with jam, nougat and how to make almonds with chocolate.
In the first afternoon we will visit Alberobello and its famous "trulli" (white houses with the roof that is a grey cone of stones).
Lastly, we will go to one of the oil mill, to learn the procedures and techniques that takeScamorze place in the production of an inimitable extra virgin olive oil. An oil tasting session shall take place in the garden of olive trees.
In the evening we’ll have dinner in a Slow Food restaurant in the historical centre of one of the most beautiful towns in Puglia and we’ll enjoy its magic atmosphere drinking a glass of wine and talking about what you learnt in the past days and the good time you had.
Transfer to the airport or station is after breakfast the following morning… and goodbye.
